| Lots of treats for your leftover pumpkin bits:
Pumpkin curry
Ingredients 1 Onion 2 Tomatoes 2 Chillies One clove of garlic coriander 2 -3 courgettes, diced Pumpkin cubes or pumpkin flesh (however much you have) 1 red pepper 1tsp and half of salt Tsp tandoori powder ¼ teaspoon turmeric Tsp chilli powder 3 tsp Vegetable oil 1. Fry the onion garlic and chillis in a wok/deep pan with vegetable oil. If you have mustard seeds or sesame seeds you can add them in now. Cook till golden brown. Add rest of spices and mix. 2. Add the pumpkin cubes and courgettes and peppers. If you have pulp, you can add that later. Mix at high heat, then put the lid on and simmer for 30 mins, until mostly soft. 3. Add the pulp and tomatoes, simmer for another 15 mins, till the tomatoes are cooked. If you want to have more solid pieces, simmer for less, it does tend to mush up, even though it still tastes nice. Serve with coriander. Add salt (pepper optional) to taste. Serve with hot rice.
(Non veg variation – add cinnamon, cloves, ground coriander. When vegetables are done, add the King prawns and cook will they curl slightly. They do not need much cooking)

| ohhhhhh that sounds really nice desi!! I'm definatley gonna give this a go after i've carved them! I was lazy today because i spent my whole 2 hours in between shifts in work today dancing with the girls on Just Dance 3 xD lol | |

I cut a small wedge in my pumpkin to make the first curry and it wasn't as sweet as I thought, so hopefully on Saturday it should be sweeter. Also I didn't put enough salt, because I was in a tearing hurry to make it, because I was hungry. Also dancing? wha? Where do you work? | |

- 2 1/4 cups all-purpose flour, sift before measuring
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 cup butter, softened (1 stick)
- 1 1/3 cups sugar
- 2 eggs
- 1 cup mashed cooked or canned pumpkin
- 3/4 cup milk
- 3/4 cup chopped walnuts or pecans (optional)
Preheat your oven to 350 degrees. Sift together all dry ingredients into a bowl. Beat your butter for a few minutes, then add your sugar. Beat these together until they are fluffy. Make sure you scrape your bowl down and beat them again, so nothing sticks! Add the eggs and beat these in until the batter is thick and fluffy. Again, scrape your bowl down and beat them again. Beat in the pumpkin. Now add half of your dry ingredients to the mixture with all of the milk. Beat this together, scrape it down, add the rest of the dry ingredients, and mix well. If you want to add nuts to this, fold them in now. Line your cupcake pans and scoop the batter into the cups (about 3/4 full.) Bake these for 25 minutes or until a toothpick or butter knife comes out clean. Cream Cheese Frosting:
- 4 ounces of unsalted butter
- 4 ounces of cream cheese
- 2 cups of powdered sugar
- 1 teaspoon of vanilla extract
Beat the butter until it is soft. Add the cream cheese. Beat these together until they're soft and fluffy. Add the powdered sugar slowly until it is fully incorporated. Add the vanilla. Beat the frosting until it is the consistency you want. (Optionally, add 1/4 tsp of salt at the end) | |
