Most Saturday's, I bake something that I've never made before. Today, I'm baking Danish Pastries.

I made the pastry myself (rather than getting it out of the packet, which I was quite tempted to do), and the pastries are now doing their last rising stage before they go in the oven.

I filled them with almond paste, which is made from 100g caster sugar, 100g ground almonds, and a bit of egg to bind it.

Making the pastry was a bit of a faff, I might just get shop-bought stuff next time. I liked making the different shapes. I made mini-croissant shapes, folded stars, folded rhombus-shapes and little envelopes. If they come out ok, I'll put some pictures up. bounce
